You can't buy happiness, but you can buy Nutella and that's pretty much the same thing, isn't it? I am pretty sure most people are big fans of Nutella, myself included, so when I found this recipe I just had to share it with you. It is Nutella and macarons together, doesn't get more delicious than that! Also, if you'd like another recipe, I did a Funfetti cupcakes recipe a while back, and it went down a treat! So let's begin with this one.
Ingredients:
3 egg whites (room temperature)
1/4 cup granulated sugar
1 bourbon vanilla bean (sliced in half and scraped)
1 2/3 cup confectioner sugar
1 cup finely ground almonds (or almond meal)
Once you have got all the ingredients, it's time to start baking! Firstly, line a baking sheet with a silicone baking mat.
Beat egg whites in the bowl of a stand mixer fitted with a whisk attachment until whites are foamy. Then beat in white sugar and scraped beans from bourbon vanilla bean, continue beating until egg whites are glossy, fluffy and hold soft peaks. Sift sugar and ground almonds in a separate bowl and quickly fold the almond mixture into the egg whites, about 30 strokes.
Spoon a small amount of batter into a plastic bag with a small corner cut off and pipe a test disk of batter, onto prepared baking sheet. When batter is mixed, spoon into a pastry bag fitted with a plain round tip. Pipe the batter onto the baking sheet in rounds, leaving space between the disks. Let the piped cookies stand out at room temperature until they form a hard skin on top, about 1 hour.
Preheat oven to 140 degrees C (285 degrees F). Bake cookies until set but not browned, about 10 minutes; let cookies cool completely before filling.
And now onto how to make the delicious Nutella filling! All you will need for it is 1 jar of Nutella. Whip Nutella with a whisk until smooth and creamy. Spread about 1 teaspoon of filling onto one macaron (be gentle, the macaron is delicate and will crumble) and sandwich another macaron on top. And that's it! Now it's time to enjoy your delicious Nutella macarons!
