Funfetti Cupcakes Recipe

Hey everyone, I hope you are having the loveliest day! For today's post I decided to do something a little bit different and share with you my favorite cupcakes recipe. I was inspired by Zoe's (Zoella's) video and decided to make my own. I have tried out this recipe and after it turned out a success, I decided to share my ''cupcake wisdom'' with you. These are perfect for a summer party or a birthday and they are so easy and wonderful to make. If you are in a sugar craving mood, definitely try out this recipe, you won't regret it!

                              

If you are wondering what a funfetti cupcake is, it is essentialy a vanilla cupcake with vanilla buttercream and lots of coloured and fun sprinkles on top. So here's what you will need to make the cakes:

125g of caster sugar
125g of self raising flour
2 large free range eggs
125g unsalted butter
 Half a teaspoon of bicarbonate soda
1 and a half tablespoons of milk
Half a teaspoon of vanilla extract

Firstly, what you should do is pre-heat the oven to 170 degrees celsius. Then in a medium bowl, mix together125 g of  butter, 125g of sugar and 125g of self-raising flour. Also, you will need to crack your two eggs and put them into the mix as well. Then you add a quarter of a teaspoon of bicarbonate soda, a quarter teaspoon of vanilla extract and one and a half teaspoon of milk. And then you just stir it all together in the mixing bowl. After you are done with that, comes the fun part, you take the sprinkles and put them in the mixture as well, as many as you prefer! The more, the better.


                             

After mixing it all together (you can do it with a spatula or use a kitchenaid, that's what I prefer) now you are ready to put in the cupcake mixture in the cupcakes tin. You can put it in some cute cupcake cases and they are ready to go in the oven!

                               


-Bake your cupcakes for 20 minutes and let them cool before icing them. And to make the delicious Buttercream icing you will need:

335g icing sugar
150g unsalted butter
1-2 tablespoons of whole milk
a quarter teaspoon of vanilla extract

Put the butter in the mixing bowl and mix it for 5 minutes. Then add the icing sugar, a third at the time, and you just sim it into the bowl. Now add 2 tablespoons of milk to make the buttercream a bit thinner and add a quarter of a teaspoon of vanilla extract. And now mix it all together!

  

You are almost finished! Take a piping bag and some more rainbow sprinkles, and put some more of them on top of the cupcakes. Also, before doing this you should let the cupcakes cool completely, because otherwise it wouldn't work. Start putting the buttercream slowly first and then add the sprinkles on top and you are all done! Hopefully the cupcakes will look and taste delicious and yummy and you and your family and friends will enjoy them!
